It’s the ultimate dip, perfect for tortilla chips or drizzling over your favorite Mexican dishes.

INGREDIENTS

  • 2 tbsp all-purpose flour

  • 2 tbsp butter

  • 1 1/2 cups whole milk (or half-and-half for extra creaminess)

  • 2 cups shredded sharp cheddar cheese

  • 1 cup shredded Monterey Jack cheese

  • 1-2 tsp Hatch Green Chile (adjust to your spice preference)

  • 1/2 tsp garlic powder

  • 1/4 tsp cumin (optional, for extra flavor and depth)

  • Salt to taste

  • 1 small tomato, diced (optional, for garnish)

  • Fresh cilantro, chopped (optional, for garnish)

INSTRUCTIONS

1. Make the Roux: In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes, stirring constantly, until lightly golden and bubbly.

2. Add the Milk: Gradually whisk in the milk, making sure there are no lumps. Continue whisking until the mixture thickens slightly, about 3-5 minutes.

3. Melt the Cheese: Lower the heat to medium-low. Slowly add the cheddar and Monterey Jack cheeses, one handful at a time, stirring constantly until melted and smooth.

4. Add the Flavor: Stir in the green chile powder, garlic powder, cumin (if using), and a pinch of salt. Taste and adjust seasoning as needed.

5. Serve: Transfer the queso to a serving dish or keep it warm in a slow cooker. Garnish with diced tomatoes and fresh cilantro if desired.

6. Enjoy: Serve immediately with tortilla chips, fresh veggies, or drizzle over nachos, tacos, or burritos!
