We’re two brothers with a deep appreciation for New Mexico and its incredible culinary traditions. Since moving here over a decade ago, we’ve come to realize the importance of the chile traditions of New Mexico. Chile is a connection to the cultural roots here and the rich history of the people around us.
We started this business because we wanted to share the unique taste of New Mexico’s chiles with others who might not have experienced it before. By working with local farmers and staying true to traditional methods, we aim to bring you authentic, high-quality chile and blends that reflect the spirit of our state and many cultures from around the world.
We’re not chefs or food experts – just two brothers who love great food and want to share it with people who appreciate it as much as we do. Thank you for being part of this journey with us. We’re excited to share a little bit of New Mexico with you, one chile at a time.
“chile” or “chili”?
The words "chile" and "chili" might seem interchangeable at first glance, but their meanings diverge depending on context and region, each carrying its own distinct legacy.
"Chile," with an "e," originates from Spanish, where it refers to the fiery, often vibrant fruit of the Capsicum plant. These peppers are integral to the cuisines of many cultures, particularly in Latin America. The word itself has deep roots, tied to the history and the spread of culinary traditions. It is also the name of a country in South America, where the pepper is a staple in everyday cooking.
"Chili," on the other hand, appears in the lexicon as a result of Anglo-American culinary traditions. With an "i," it typically refers to a hearty stew, often made with ground meat, beans, tomatoes, and, of course, chili peppers. Though its name may derive from the pepper itself, the word has come to symbolize the rich, comforting meal that has become a staple in American kitchens.
