Green Chile Aioli
Green chile aioli is a silky, savory sauce bursting with the earthy heat of green chile and balanced by creamy mayo, zesty lime, and a hint of garlic. Perfect as a dip, spread, or drizzle, it adds a flavorful kick to everything from fries and burgers to tacos and grilled veggies.
INGREDIENTS
• 1/2 cup mayonnaise
• 1 garlic clove, minced (or 1/4 tsp garlic powder)
• 1-2 tsp Hatch Green Chile powder (adjust to taste)
• 1 tsp fresh lime juice
• 1/4 tsp ground cumin (optional, for added depth)
• Salt to taste
• 1-2 tbsp water (optional, for thinning)
INSTRUCTIONS
1. In a small bowl, whisk together the mayonnaise, minced garlic, and green chile powder.
2. Add the lime juice and ground cumin, then mix until smooth.
3. Taste and season with salt as needed.
•If you prefer a thinner consistency, gradually stir in water, one tablespoon at a time, until you reach your desired texture.
